Hunting season for us is about to start and has already started for a lot of folks elsewhere. Not only am I having thoughts of hogs and deer, I am thinking of how good they taste smoked! It is cool enough outside to enjoy watching the smoker cook and not get too hot in the process. Yes, I use propane, I am not a purist. The convenience of propane makes it my mode of choice for smoking meat. As for the woods I use, I prefer Cherry for smaller things and Oak or Hickory for bigger cuts. When given the opportunity, I also enjoy smoking fish. If you haven't tried it, don't knock it.
