A hundred years or so ago, one of the tasks presented to me was to produce a 1 inch square cube from a chunk of steel with a hacksaw, file and square. Simple as that may sound, it ain't easy. Don't laugh, it ain't easy in wood either. Go ahead and test yourself. Get a block of wood, a handsaw, hand plane, a good square, and a ruler. Layout your block, rough cut it to size with the handsaw, then plane it square and flat to the other sides. ALL surfaces to be flat and square to the others.
OK, without specified tolerances for all dimensions there is plenty of fudge room. I will leave the tolerances to you, make it easy on yourself. I would like to hear your comments and see your finished blocks. If nothing else, produce a few 1 inch cubes however you like, whatever method you prefer and see just how well you do, you might be surprised and then again, you might be shocked. Dimensionally isn't too bad but square and perpendicular can be a real booger. Go ahead, get out there and make some chips!
